Gaba tea is a modern tea that was originally created for medicinal purpose by Dr. Tsushima Tojiro and his team at Japan's National Tea Experimental Station' back in the 1980's. However, is it the Taiwanese that became the World's producer and supplier of Gaba Cha, attached by its fascinating flavors. It is now standing high in any fine teas catalogues.
In order to be considered a "GABA tea" the leaves of this tea has to undergo and unique type of oxidation. Mature whole leaves are plucked during warm weather to ensure high levels of glutamic acid (a precursor to GABA). Morning harvests are often preferred for their higher nutrient content. The leaves are then spread indoor or outdoor to wither, depending on the weather. Then, they are rolled and shaked to begin the oxidation process. The following process is a unique process of oxidation allowing the leaves to convert the glutamic acid in the leaves into GABA. For this to occur, the leaves will be placed in an airtight, oxygen-free chamber, in a vacuum-sealed container, or a nitrogen-filled chamber. Finally, the leaves are pan-fired or steamed at high heat to stop oxidation and lock in the desired flavors and chemical profile.
GABA, for Gamma-aminobutyric acid, is an important amino acid that functions as a neurotransmitter in the central nervous system. This is why Gaba tea has been considered for its multiple important health benefits that range from calming the mind, combating depression, mood uplifting, memory retention, relaxation, diminishing anxiety, and increasing general emotional well being, to mention a few.
