Beautiful shou mei white tea from the family of our tea master friend Duo Duo. For many generations, her family have been making tea at their farm in Fujian, China.

The leaves of this shou mei were harvested in 2019, in Fuding Dieshishan, Fujian, China. The leaves are withered and dried under the moon in a cool environment, compressed into a bing cha, and stored to age.

Elemental wisdom Yin Water 

Brewing guide:
Teapot: 250 ml water · 80°C water · 3-5g tea · 2 minutes infusion. 
Gong Fu Cha: 100 ml water · 85°C water · 3 tsp tea · 
Multiples Infusions; (1st) 20 sec (2nd) 15 sec (3rd) 25 sec
+ 5 sec every additional infusions.
*If served cold, brew first respecting water temperature and time depending on the technique use. Then, pour in a thermos with ice, shake, let it cool down and serve or store in the fridge for a few hours.
